Beef Balti

  • 400 gr. rice brown med grain ckd
  • 400 gr. beef top loin
  • 300 ml beef broth
  • 1 onion, fresh, med
  • 1 tbsp fresh ginger root
  • 1 clove(s) garlic
  • 2 tsp spice turmeric ground
  • 4 tsp curry powder
  • 2 tsp chilli powder
  • 1 tsp ground mustard seed
  • 100 ml single cream
  • 100 gr. whole milk yogurt
  • 3 tbsp tomato paste
  • 2 tsp ground coriander
Preparation instructions:
  1. To make the Onion Puree, bring a small pan of water to the boil and add some chopped onions.
  2. Boil until soft, drain and puree with a hand blender or in a food processor.
  3. Pour the oil into a large saucepan bring up to a high heat.
  4. Add the whole seeds and cook until they sizzle and crackle then add the chopped onions and reduce the heat to low.
  5. Cook the onions gently and slowly until they turn a golden brown colour.
  6. Make a paste of the ginger, garlic, curry powder, Turmeric powder, Chilli powder, with a little water. Add to saucepan and stir in well and fry for a couple of minutes.
  7. Add your diced beef and stir well.
  8. Mix the Cream, Yogurt, Tomato Puree, Onion Puree, together in a jug with the water or stock and pour into the saucepan and mix in well.
  9. Turn up the heat until the sauce begins to simmer and leave to simmer for 20 Minutes. Stir occasionally.
  10. Garnish with the Roughly chopped fresh coriander leaves and serve over brown rice.
